All you need is a bowl of cream of fresh tomato soup and you're ready to go.

With a big dash of fresh pesto.

It seems that if we are sharing recipes just two days before the election, we all must be feeling fairly confident. Being normal again is something much to be wished.

Suggestion on the recipe: spread a thin coat of mayonnaise on the outside face of each slice of bread (preferably Kewpie, if you can find it). Reinforces the zing of the cheese and helps build a nice crust on the bread.

Noted!

How light-hearted I feel! LOL! ((( )))

If you want to spice it up a bit, Trader Joe’s has a wasabi mayo that is good on everything! I think the wasabi zing would be a great foil for the rich cheese blend!

That sounds good. I know all about TJ's. My local one is a 3-minute drive away, and when I lived on Mt. Washington I used to shop at the original TJs on Fair Oaks in Pasadena. You guys in Atlanta have the only TJs in the southeast.

Nope, Jacksonville, Florida has more than one Trader Joe’s!

Yes, mayo (especially Best Foods/Hellmans) makes a great coating for pan frying or baking❤️❤️❤️

]"Having said that" -- here's] "my suggestion on the recipe." LOVE IT!!!!!

Isn’t it nice to be able to discuss recipes instead of the latest outrage? Ever tried broccoli soup with Stilton?

Expand full comment

Have you ever soaked a good Stilton in a crock with a real fine Porter? The Captain of a British ship I worked on years ago did that with a fine Porter I gave him as a present, but he said he couldn't drink under way so the cheese would work just fine.

Election? What eletion? This is sanity talking .

I LOVE THIS DISCUSSION!!! Everybody sounds NORMAL! -- the way things used to be back in 2009.

You making a dip with this? I assume any blue cheese could work. Though Limburger only if you open all the windows first.

Hummmm….. no but sounds great. Try cauliflower soup with Brie!!!

Another good gift from TC. What a treasure. The tomato soup on the side rounds it out with some nice Bread and Butter pickles (homemade).

Try Swiss on rye with a thin costing of Kewpie mayo in place of butter.

Just waiting for the cold weather to arrive in Houston and then I’ll make this.

Dallas here. Good luck on the cold weather, Houston. Do what I do. Just crack the AC down and pretend. 😄

I know what i'll be doing tomorrow for lunch!Thems my cheese. No gruyere left but a big chunk of havarti is in the back of the cheese drawer. I have a tasty real rye that iI like to do open face so the broiler gets the bubbles poppin and a bit of crisp. MM mmm. The brioche is tasty, I know and looks perfect.

Love this weather! I made minestrone with meatballs tonight. I've never grated the cheese together which makes sense for the consistency of melting, but I always use at least two kinds, and include a tomato slice and sometimes bacon. Yum!

The tomato gets you at least one serving of vegetable for the day. Throw some celery and carrot sticks on the side and you're halfway there.

And apple slice :)

A friend of mine told me about Mexican coke. A bit expensive, but worth it. I love grilled cheese.

Expand full comment

We also call them grilled instead of toasted. Either name is weird because they're made in a frying pan.

I don't recall if I've ever had Mexican Coke, but I do recall one time in Ensenada when my wife and I bought a bottle of mineral water and found it contained lithium. I kid you not. (I had to check the label because I was experiencing something like what I hope to be feeling tomorrow.) Given the possible side effects of ingesting too much lithium, we did the only responsible thing. We bought some tequila to dilute it with. What a lovely vacation that was. But I don't recommend that combination with your perfect toasted cheese sandwich.

I'm impressed.

Sounds like it is worth trying!

I've never thought of grating the cheeses! Sounds great! Brioche. The cheeses. Easy to get. Mexican Coca Cola? How can I get that in MI?

Expand full comment

Probably can't. We get them at some supermarkets here in S. Calif (proximity to the source matters).

Expand full comment

You might be able to find it on line and get it shipped. Not cheap, but it’s worth it on occasion.

Look for a bodega where you can buy all kinds of Mexican products. Also Walmart often carries Jarritos soda in many flavors (grapefruit is my favorite) all made with cane sugar, no fructose.

Expand full comment

Thanks! We certainly have those in Michigan.

Expand full comment

We call them grilled cheese in Illinois.

Expand full comment

We do too, but then we fry them on the pan as described... go figure.

Expand full comment

Ha! I see you say that below, too. VA here - and we can get Mexican coke in glass bottles at least (liter) at Global Food.

Meijer sometimes carries it and, depending on where you are, some Kroger stores do too. Check the labels.

Definitely cool weather-worthy and I can't wait to try the grated cheese. Toasted cheese is our default for when it's been a long, hard day. Most folks slather butter on the bread slices - for a delicious "Twist," try mayo instead!

Oh, yeah!

Mexican original Coke. Perfect.
