It seems that if we are sharing recipes just two days before the election, we all must be feeling fairly confident. Being normal again is something much to be wished.

Suggestion on the recipe: spread a thin coat of mayonnaise on the outside face of each slice of bread (preferably Kewpie, if you can find it). Reinforces the zing of the cheese and helps build a nice crust on the bread.

If you want to spice it up a bit, Trader Joe’s has a wasabi mayo that is good on everything! I think the wasabi zing would be a great foil for the rich cheese blend!

That sounds good. I know all about TJ's. My local one is a 3-minute drive away, and when I lived on Mt. Washington I used to shop at the original TJs on Fair Oaks in Pasadena. You guys in Atlanta have the only TJs in the southeast.

Have you ever soaked a good Stilton in a crock with a real fine Porter? The Captain of a British ship I worked on years ago did that with a fine Porter I gave him as a present, but he said he couldn't drink under way so the cheese would work just fine.

I know what i'll be doing tomorrow for lunch!Thems my cheese. No gruyere left but a big chunk of havarti is in the back of the cheese drawer. I have a tasty real rye that iI like to do open face so the broiler gets the bubbles poppin and a bit of crisp. MM mmm. The brioche is tasty, I know and looks perfect.

Love this weather! I made minestrone with meatballs tonight. I've never grated the cheese together which makes sense for the consistency of melting, but I always use at least two kinds, and include a tomato slice and sometimes bacon. Yum!

I don't recall if I've ever had Mexican Coke, but I do recall one time in Ensenada when my wife and I bought a bottle of mineral water and found it contained lithium. I kid you not. (I had to check the label because I was experiencing something like what I hope to be feeling tomorrow.) Given the possible side effects of ingesting too much lithium, we did the only responsible thing. We bought some tequila to dilute it with. What a lovely vacation that was. But I don't recommend that combination with your perfect toasted cheese sandwich.

I've never thought of grating the cheeses! Sounds great! Brioche. The cheeses. Easy to get. Mexican Coca Cola? How can I get that in MI?

Look for a bodega where you can buy all kinds of Mexican products. Also Walmart often carries Jarritos soda in many flavors (grapefruit is my favorite) all made with cane sugar, no fructose.

Definitely cool weather-worthy and I can't wait to try the grated cheese. Toasted cheese is our default for when it's been a long, hard day. Most folks slather butter on the bread slices - for a delicious "Twist," try mayo instead!
